Budget Snacks: Homemade Granola Cups

Who doesn’t love granola bars? The chewy chocolatey goodness that brings me back to second grade snack time, I love the convenience of a quick healthy snack option on the run! That being said, the waste created with buying a box of individually wrapped bars, plus the cost since we’d blow through a box in about four hours inspired me to take a swing at making our own!

The recipe I used was super simple, creating a basic bar of peanut butter, honey, and quick oats. Once that turned out deliciously, I decided to create a batch with shredded coconut and chocolate chips and they turned out even better than I expected!

You can use either a square baking pan and cut the bars up, or I prefer the muffin tin method, filling each to create more of a granola cup than a bar. No matter how you serve them, they’re super easy to make, versatile, healthy, and light on the wallet! Just cover and freeze once prepared and you’re good to go!

Recipe:

2 cups quick oats

1 cup peanut butter

1/4 cup honey

2 tbsp chocolate chips

2 tbsp shredded coconut

Mix all ingredients in one big bowl until combined, it should look like the picture below.

Either spread in a square baking pan or press into muffin tins!

Promptly place in the freezer to freeze into shape and within an hour you’re all done!

I’ve been using up cupcakes liners to wrap them this past week, but you can also just throw them in a Tupperware container or plastic bag!
